These Vanilla Latte Espresso Cookies are the perfect treat for all the coffee lovers out there! I love recipes inspired by popular drinks, and these cookies are the latest creation. With a combination of espresso flavored cookie dough and scattered bits of velvety white chocolate, you can’t go wrong. If a vanilla latte is your go-to order from coffee shops, this one is for you.

Ingredients You’ll Need for Vanilla Latte Cookies:
- Unsalted Butter – You will need one stick of unsalted butter brought to room temperature.
- Sugars – You will need a half cup of both granulated sugar and light brown sugar for these cookies.
- Eggs – One whole egg is needed for this recipe plus one egg yolk to make the dough extra rich.
- Vanilla – You will need a half tablespoon of vanilla extract to flavor the dough. I prefer to use a clear vanilla extract for this recipe for a lighter, sweeter vanilla flavor profile, but you can use any vanilla you have.
- All-Purpose Flour – You will need one and three quarters of a cup of all-purpose flour for these cookies.
- Baking Soda – You will need a half teaspoon of baking soda to make these cookies light and fluffy.
- Salt – A quarter of a teaspoon of salt is needed.
- Espresso Powder – You will need a tablespoon of espresso powder to bring the coffee flavor to these cookies. It is important to use espresso powder, not instant coffee powder, in order to have the best and strongest coffee flavor.
- White Chocolate – You will need two thirds of a cup of roughly chopped white chocolate to mimic the milk part of a latte in these cookies. I just buy a bar of Ghirardelli baking white chocolate for this. You can use white chocolate chips too, but I find that the chopped chocolate in this dough allows the flavor to be spread more consistently through the baked cookie.

Scoop the dough onto a cookie sheet and place more chocolate on top if desired
Notes:
I roughly chop the chocolate just enough so that the biggest pieces are close to the size of normal chocolate chips. As a result, you will have a mix of large and smaller pieces of chocolate that will distribute throughout the cookie more evenly. This allows for there to be more white chocolate flavor throughout the cookie instead of just big chunks here and there.
I prefer to use espresso powder meant for baking with for these cookies, like this one from Medaglia D’oro. Instant coffee just doesn’t have the same strength and smooth flavor. You could also use regular ground espresso for these, but you may end up with a gritty texture in the cookies.

Ingredients
- 1/2 c (1 stick, 113g) unsalted butter, room temperature
- 1/2 c (99g) granulated sugar
- 1/2 c (106g) light brown sugar
- 1 egg + 1 yolk
- 1/2 tbsp vanilla extract
- 1 3/4 c (210g) all-purpose flour
- 1 tbsp espresso powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2/3 c (113g) white chocolate, chopped
Instructions
- Preheat the oven to 375ºF.
- Roughly chop the white chocolate.
- Combine the flour, baking soda, espresso powder, and salt in a medium bowl.
- In a separate large bowl, cream the butter and sugar until light in color.
- Beat in the egg, egg yolk, and vanilla until light and fluffy.
- Add the dry ingredients and mix.
- Add the white chocolate and mix until just combined.
- Scoop roughly 2 inch pieces of dough on to a cookie sheet.
- Bake for 10 minutes or until golden brown.
