Chocolate Covered Strawberry Cookies
You don’t need Valentine’s Day to enjoy the timeless treat of chocolate-covered strawberries, because now they exist in cookie form. These chocolate covered strawberry cookies start with a rich, fudgy chocolate cookie base that’s bulked up with chocolate chips and freeze-dried strawberry bits to provide refreshing pops of flavor. Make a batch for yourself, or someone you love, for a dessert reminiscent of the classic Valentine’s sweet. ❤️

Ingredients You Will Need For Chocolate Covered Strawberry Cookies:
- Freeze-Dried Strawberries – You will need 1 cup of roughly chopped freeze-dried strawberries to add to the dough. I always find mine at Trader Joe’s, but a lot of grocery stores sell them these days.
- All-Purpose Flour – You will need 3/4 cup of all-purpose flour.
- Cocoa Powder – You will need 3/4 cup of cocoa powder, I like to sift it so there aren’t any big clumps left!
- Baking Soda – You will need 1/2 teaspoon of baking soda to make the cookies light and fluffy.
- Salt – You will need 1/4 teaspoon of salt to balance out the sweetness in these cookies.
- Unsalted Butter – You will need 1 stick of butter, softened to room temperature.
- Brown Sugar – You will need 3/4 cup of brown sugar. I like to use dark brown sugar for this recipe, but light brown sugar works perfectly fine as well.
- Egg – You will need 1 large egg for this recipe, preferably room temperature to ensure it incorporates well with the other ingredients.
- Vanilla – You will need 1 teaspoon of vanilla extract.
- Chocolate Chips – You will need 2/3 of a cup of semi-sweet chocolate chips, plus a little extra for drizzling after if you choose. You can substitute for milk or dark chocolate chips if you prefer!
Notes:
No. The reason I use freeze-dried strawberries for these cookies is because they don’t add any extra moisture to the dough. You will end up with a much wetter dough that will behave differently if you try to use fresh strawberries for these.
It can be hard to tell when chocolate cookies are done since the browning is less obvious. Once the cookies have started to crack slightly and appear dry on the surface, they’re done. Be careful not to over-bake or you will end up with dry cookies.
I like to melt a little white and dark chocolate, add each to a ziplock, and drizzle a small section of each cookie with both chocolates. Then, I sprinkle that with more crushed up freeze-dried strawberries. This is a fun, easy way to elevate the look of your cookie and you can’t really mess it up!

Ingredients
- 1 cup (20 grams) freeze-dried strawberries, roughly chopped
- 3/4 cup (90 grams) all-purpose flour
- 3/4 cup (63 grams) cocoa powder, sifted
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 stick (113 grams) butter, room temperature
- 3/4 cup (160 grams) brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2/3 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 375ºF.
- Roughly chop the freeze-dried strawberries until about the size of chocolate chips. Set aside.
- In a medium-sized bowl, combine the flour, sifted cocoa powder, baking soda, and salt. Set aside
- In a separate large bowl, cream the softened butter and brown sugar together until lighter in color.
- Add the egg and vanilla. Beat again until light and fluffy.
- Add the flour mixture and mix until just combined, the dough will be thick.
- Add the chocolate chips and the chopped freeze-dried strawberries. Mix until just combined.
- Scoop 1″ bits of dough onto a cookie sheet at least 3-inches apart. Bake for 10 minutes.
- Once the cookies have cooled, garnish with a drizzle of melted chocolate and more crushed freeze-dried strawberries if desired.

- Make sure to sift your cocoa powder for a smooth texture.
